Avocado and cheese quesadillas

  • 2 ripe avocado
  • Salt to taste
  • Juice of ½ lemon
  • 1 tablespoon of extra virgin olive oil
  • 12 tortillas
  • 2 cups of crumbled ricotta cheese
  • 1 cup of disinfected spinach leaves
  • ½ cup finely chopped cilantro


  1. Cut avocados in half, scoop out all the flesh and cut into slices, put in a bowl, add salt to taste, lemon juice and set aside.
  2. Add olive oil in a frying pan and place a tortilla, put on top a layer of cheese, avocado, spinach, a little bit of cilantro, fold the tortilla in half to form a half moon and heat 30 seconds per side.
  3. Repeat this procedure with the rest of the tortillas, serve and enjoy these delicious and healthy avocado and cheese enchiladas.


To disinfect the spinach, place the leaves in a bowl, cover with water, add a tablespoon of white vinegar, stir and let stand for 10 minutes. Remove the leaves and drain on absorbent paper towels.
