Baked chicken with vegetables

Today we bring you a dish with which you can delight all your loved ones, baked chicken with vegetables, an easy and quick recipe to prepare that from now on will become one of your favorite meals, so do not wait any longer, get into your kitchen and join us to make this delicacy.

Ingredients

  • 2 kg chicken thighs and legs
  • 3 large potatoes, well cleaned
  • 2 peeled carrots
  • 4 cambray onions
  • 2 zucchini
  • 1 yellow bell bell pepper
  • 1 green bell bell pepper
  • 1 red bell bell pepper
  • 1 chayote
  • 6 garlic cloves
  • 2 tablespoons of olive oil
  • Salt and pepper to taste


For the marinade

  • ¼ cup olive oil
  • Ground pepper to taste
  • Salt to taste
  • Juice of 1 lemon
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin powder
  • ½ teaspoon paprika

Preparation

  1. Place the chicken in a bowl and add each one of the ingredients for the marinade, massaging each piece piece by piece so that it is well impregnated, cover and take to the refrigerator for 2 hours.
  2. Remove the chicken from the refrigerator and proceed to cut the potatoes, carrots, cambray onions, zucchini, peppers, chayote and garlic into cubes of the size of your preference.
  3. In a baking dish, spread 1 tablespoon of olive oil, add the vegetables you just cut up except for the zucchini and peppers. Add the remaining oil and the desired amount of salt and pepper on top. Mix very well.
  4. Now add the chicken pieces to the tray with everything and the marinade juice and take them to the oven previously heated to 200°C to cook for 20 minutes.
  5. Remove the tray from the oven, add the zucchini and peppers and bake again for another 30 minutes or until the chicken pieces are golden brown.
  6. After the cooking time, remove the tray from the oven and let it rest for 10 minutes.
  7. Now you can serve and please your guests’ palate with this succulent baked chicken with vegetables.

Tips

  1. It is important to add the zucchini and peppers when the chicken has been cooking for 20 minutes, since they are the vegetables that cook the fastest and thus obtain a very exquisite texture of the whole dish.
