Bean and cheese soups

Enjoy these delicious bean and cheese sopes that are literally finger-licking good, a very easy recipe that will only take you a few minutes to prepare, so you can have on your table a dish that is ideal to eat on any occasion, plus we will accompany them with a spicy red sauce that you will love.

Ingredients

  • Refried beans to taste
  • 1 finely chopped red onion
  • Crumbled Cotija cheese to taste
  • 3 lettuce leaves chopped in strips
  • Sour cream to taste


For the sopes

  • 2 cups Maseca flour
  • Salt to taste
  • 2 cups of water
  • Vegetable oil for frying

  • 3 large tomatoes
  • 5 serrano chiles
  • 5 chiles de árbol
  • 1 piece of onion
  • 3 cloves of garlic
  • Salt and pepper to taste

Preparation

  1. Start preparing the sauce by placing the tomatoes, chiles, onion, garlic and onion in a small pot, cover with water and let cook for 15 minutes.
  2. Remove the vegetables from the heat and pour them in the blender with a little of the same water where they were cooked, add the cumin, salt and pepper to taste and process until you obtain a homogeneous red sauce, pour into a bowl and set aside.
  3. To prepare the dough for the sopes, add the flour in a large bowl, add a little salt and knead while pouring the water little by little. The dough should be smooth, moldable and not stick to your fingers.
  4. Roll the dough into balls the size of tennis balls, place one inside a tortilla press covered with plastic wrap and flatten. The tortilla should not be too thin, about half a centimeter thick.
  5. With the tortillas ready, place them on a hot skillet to cook halfway on each side and remove them.
  6. Pinch the edges of the tortillas up with your fingers to form the sopes, heat enough oil in the skillet and place them to fry on both sides, remove and drain on absorbent paper towels.
  7. Heat the beans to your liking and spread a thick layer on each sope, add onion, lettuce, cheese, cream and the picosita sauce you prepared.
  8. Now all you have to do is serve and enjoy these succulent bean and cheese sopes.

Tips

  1. For this recipe you can use any type of cooked beans you like, even a canned version.
  2. If you do not have enough time, you can use any other dressing and prepare the dish with store-bought sopes.
  3. It is important that the tortillas are half cooked, otherwise it will be very difficult to shape them into sopes.
  4. If you do not have a tortilla press, cover the dough ball on top and bottom with plastic wrap and stretch with the help of a rolling pin or flatten with a heavy frying pan.
