Ingredients

  • 500 grams boneless chicken breast
  • 1 teaspoon mustard
  • ½ tablespoon soy sauce
  • ½ tablespoon ground oregano
  • ½ tablespoon paprika
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • 150 grams of pork chorizo sausage
  • 12 flour tortillas
  • 2 serrano chiles
  • 1 red bell pepper
  • 1 onion
  • 1 cup manchego cheese
  • 1 tablespoon oil

Preparation

  1. Start by cutting the chicken into small cubes, place in a bowl, add the mustard, soy sauce, oregano, paprika, garlic powder, salt and pepper to taste, stir and set aside in the refrigerator.
  2. Now devein and de-seed the chiles and finely chop the onion, then slice the bell bell pepper into strips.
  3. Add the oil to a frying pan and sauté the onion for 2 minutes, then add the chili and bell pepper and sauté for 3 more minutes.
  4. Add the chorizo to the pan and cook for 5 minutes while mashing a little with the help of a fork.
  5. When the liquids have reduced, add the chicken to the pan, stir and cook for about 10 minutes, adjust the salt if necessary and remove from the heat.
  6. In a skillet or on a comal, place a tortilla, add a good portion of cheese and chicken with chorizo, fold in half and cook for a few minutes on both sides so that the cheese melts. Remove and repeat the same procedure with the rest of the tortillas.
  7. Now all that’s left is to serve and enjoy these succulent quesadillas with chicken and chorizo that are literally finger-licking good.

Tips

I don’t usually add any type of dressing to this dish, but if you like, you can add a little guacamole or the sauce of your preference when serving.

If you don’t have manchego cheese, you can substitute it for whatever you like, as long as it melts easily.
