  • 1 kilogram of flank steak
  • ½ tablespoon ground oregano
  • ½ tablespoon ground thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 12 corn tortillas
  • 1 ½ cups grated manchego cheese
  • Sour cream to taste
  • Finely chopped fresh parsley to taste

For the pico de gallo

  • 2 tomatoes
  • ½ onion
  • 1 jalapeño
  • 1 bunch of fresh cilantro
  • Juice of 1 freshly squeezed lime
  • Salt and pepper to taste


  1. Start by making the pico de gallo, to do so, finely chop the tomato, onion, jalapeño and cilantro, place everything in a bowl, add the lime juice and mix, salt and pepper to taste and stir again. Cover and set aside in the refrigerator for at least 20 minutes.
  2. Place the meat in a bowl and season with oregano, thyme, garlic powder, salt and pepper, turn on the grill, and when it is at the desired temperature, place the steaks on the grill to cook for 4 to 6 minutes per side, depending on the desired doneness.
  3. Remove the meat from the heat, let it rest for about 3 minutes and proceed to cut into thin strips.
  4. Take a tortilla and add some manchego cheese forming a bed, add pico de gallo to taste, carne asada, fold in half, take to the grill or a hot griddle and cook 1 minute per side or until the cheese melts completely.
  5. Repeat this procedure with the rest of the tortillas and serve these delicious carne asada and pico de gallo quesadillas with a little sour cream and finely chopped parsley on top.


If desired, add a little pico de gallo on top of the quesadillas before serving.
