I invite you to prepare this delicious recipe for gut tacos, accompanied by a rich white cheese sauce and crispy nacho, you cannot miss it.

  • 2 kg of beef casings.
  • 2 onions.
  • 10 garlic cloves, peeled.
  • 2 tablespoons of salt
  • Corn tortillas.
  • 1 bag of nachos to accompany (for the sauce)

For the sauce.

  • 2 tablespoons of oil.
  • 250 ml of liquid cream.
  • 5 garlic cloves, peeled
  • 1 jalapeño.
  • 250 gr of striped white cheese.
  • 1 onion, finely chopped
  • ½ cup chopped coriander


  • We start by washing the beef casings very well, we remove a little fat, take them to a large pot, cover them with enough water and cook over high heat until they boil.
  • Chop the onions and garlic in half, once the water has started to boil add them to the pot, cover it and cook over medium heat for 2 hours or until the casings are soft.
  • When the beef guts are soft, remove them from the water and, without letting them cool, cut them into pieces about 2 or 3 cm long.
  • We take them to a very hot frying pan over high heat to sauté of your preference while stirring constantly to avoid burning.
  • To prepare the sauce, crush the garlic in a molcajete, finely chop the jalapeño and place them in a frying pan over medium heat with the oil and sauté for about 5 minutes.
  • We add the cream while we are stirring, when everything is very hot we add the striped cheese little by little while continuing to mix.
  • With the cheese completely melted, salt and pepper, turn off the pan, add the onion, coriander, stir and reserve in a container.
  • We heat the tortillas on both sides, add the casings and the white sauce of your preference, place them on a plate next to the nachos and enjoy these delicious casserole tacos.


  • If we see that the guts drain a lot of fat when cooking them, when they have been cooking for 1 hour, we strain them to throw the water out and we take them to the fire again with clean water along with the onions, garlic and another tablespoon of salt.
  • If we want to add more flavor and texture to the tacos, we can add chopped onion, coriander to the filling, likewise crush the nachos and place them on top.
