Romeritos with mole and chicken

Prepare in a quick and easy way these delicious romeritos with mole and chicken, a recipe that from today will become one of your favorites for the wonderful flavor that offers in every bite, plus you will not need many ingredients and I assure you that your family will be delighted with the result.


  • ½ kg of washed and disinfected romeritos (baby rosemary)
  • 2 tablespoons of oil
  • 2 cloves garlic, finely chopped
  • ¼ onion, finely chopped
  • 2 chicken fillets, cut into cubes
  • 3 cooked potatoes, peeled and cut into cubes
  • 250 grams of mole paste
  • 1 tablespoon chicken bouillon



  1. Place the romeritos in a pot of boiling water and let them soak for 1 minute while rotating them.
  2. Drain in a colander and plunge again into another bowl of ice water, let soak for 1 minute and drain again in a colander. Set aside.
  3. Heat the oil in a large skillet and add the garlic cloves and onion to sauté for 2 minutes.
  4. When the onion is browned, add the chicken to the pan and sauté for about 3 minutes to brown and sear evenly.
  5. Remove the chicken from the pan and add the mole, hot water (about 2 cups), chicken bouillon and cook over medium heat while stirring to dissolve the mole.
  6. When the mole is completely dissolved, add the romeritos, cooked chicken, potatoes and cook for 10 minutes over low heat while stirring.
  7. Remove the pan from the heat and immediately serve these delicious romeritos with mole and chicken. Enjoy.


  1. To disinfect the romeritos, place them in a bowl with water and a tablespoon of white vinegar, soak for 10 minutes and drain.
  2. To cook the potatoes just place them in a pot with enough water and salt to taste for 20 minutes or until they are soft, remove, let stand, peel and cut into cubes.
