Sopes with guacamole

Guacamole is one of the most traditional dishes and consumed throughout Mexico, so today I bring you a recipe that you will surely love sopes with guacamole, which also combine with an exquisite filling based on chipotle chili and corn kernels that give it more texture and intensify even more all the flavors, enjoy it.

Ingredients

  • 6 corn sopes
  • 1 ½ cup oatmeal
  • 1 medium onion
  • 1 medium tomato
  • 1 garlic clove
  • ½ cup corn kernels
  • 1 can chipotle chiles
  • Parmesan cheese to taste


For the guacamole

  • 4 ripe avocados
  • 2 serrano chiles
  • 1 large tomato
  • 2 cloves of garlic
  • Juice of 2 lemons
  • Salt and pepper to taste

Preparation

  1. Halve the avocados, remove the seed and scoop out the pulp into a bowl, mash with a fork. Set aside.
  2. Finely chop the onion, tomato and cilantro, devein and seed the serrano chiles and finely chop. Reserve everything in a bowl.
  3. In a molcajete add the garlic together with the lemon juice and grind until well crushed, then add the previously reserved vegetables and continue crushing.
  4. Now add the avocados to the previous preparation, add salt and pepper to taste and grind until you obtain a creamy paste. Reserve in the refrigerator until ready to use.
  5. Remove the vein and seeds from the chipotle peppers and cut into slices.
  6. Heat a skillet over medium heat with the oil, add the garlic, half tomato and half onion, sauté for 3 minutes while stirring occasionally.
  7. Add the oatmeal and corn kernels to the sauce, sauté and add the chipotle chiles to the preparation, cook for 3 more minutes. Rectify seasoning and remove from heat.
  8. In a comal over medium heat, place the sopes and heat them for 1 minute on each side.
  9. Now take a sope, add a portion of the stew, a layer of guacamole and sprinkle some parmesan cheese.
  10. Now all that’s left is to enjoy these delicious sopes with guacamole.

Tips

  1. Add an avocado seed to the previous preparation to prevent the avocado from oxidizing and turning dark.
  2. If you wish, you can fry the sopes in vegetable oil or lard.
  3. If you prefer, you can add fresh chipotle chiles to the stew.
