Steamed beef tacos

Do not miss this fabulous steamed beef tacos recipe that we will accompany with a rich green sauce and a salad with radishes that will delight you.

  • 12 corn tortillas.
  • 1 kg beef skirt.
  • 1 sliced onion.
  • 3 coriander branches.
  • 4 peeled garlic cloves.
  • Salt and pepper to taste.
  • 2 banana leaves.
  • 2 radishes.
  • 5 coriander branches.
  • ½ purple onion.
  • Sliced lemon to taste.

For the green sauce

  • 500 gr of tomatillo.
  • 8 serrano peppers.
  • ½ large onion.
  • 1 tablespoon of salt.
  • 1 teaspoon ground pepper.


  • We add water in the steamer and cover the bottom with the banana shells.
  • We season the meat, place it inside the steamer next to the onion, garlic and cilantro, cover it with more banana leaves and let it cook for an hour and a half.
  • For the sauce, place the tomatillos and chili peppers in a pot with plenty of water for 10 minutes, while cooking, chop the onion ½ into thin cubes and set aside.
  • Once the tomatillos and chiles are cooked, we liquefy them for 3 minutes with a little of their water, salt and pepper, empty the sauce in a container, add the chopped onion and reserve.
  • When the meat is cooked, we let it cool a little and we break it, place it in a bowl and take it back to the steamer for 5 minutes to warm it.
  • Chop the radish, onion, cilantro and reserve.
  • After 5 minutes, we heat the tortillas in the steamer for 2 minutes.
  • Now we will prepare the tacos with meat, sauce, onion, radishes, cilantro and lemon juice to taste. We can only taste and enjoy.


We must avoid cooking other tomatillos, because if your skin breaks it can give a bitter touch to the green sauce.

If we do not have a steamer we can cook the meat and tortillas in a water bath, its cooking time may increase a little.
