Torta de tamal, a very popular culinary delicacy within the Mexican gastronomy that you can’t miss, so you can surprise all your guests with a delicious meal this weekend, and best of all, in this recipe that we present below we will teach you step by step how to make it in a very easy way.


  • Bread rolls
  • Sour cream to taste
  • Fresh crumbled cheese to taste

For the green sauce

  • 800 grams of tomatillos
  • 4 garlic cloves
  • ½ onion
  • 10 serrano chiles
  • 1 bunch of fresh cilantro
  • Salt to taste
  • Pepper to taste

For the tamales

  • 1 ½ kg of pork shoulder
  • 4 garlic cloves

  • 4 cups of flour for tamales
  • 3 cups of broth from cooking the pork
  • 400 grams of pork lard
  • 1 tablespoon of baking powder
  • Hydrated corn husks


  1. Start by pre-cooking the tamales, so chop the pork and place it in a large pot along with the garlic cloves, onion, salt to taste, cover with enough water and let it cook over medium-high heat for approximately 90 minutes.
  2. While the meat is cooking proceed to make the green sauce, cut the tomatillos, garlic cloves, onion, serrano chiles, cilantro, salt and pepper to taste and take everything to the blender, process for 2 minutes or until you obtain a homogeneous sauce with a thick consistency.
  3. Pass the sauce through a fine mesh strainer and reserve both the pulp and the liquid part in different containers.
  4. At the end of the cooking time and the meat is very soft, remove it from the pot without discarding the broth so that it rests in a colander and proceed to shred it with the help of 2 forks. Set aside.
  5. Now prepare the dough for the tamales, place the flour in a large bowl, add salt to taste and while kneading, add little by little the necessary amount of the reserved broth. The dough should not be too soft, but it should be moldable.
  6. In another bowl, place the pork lard and beat for 10 minutes with a stick blender at maximum speed so that the lard becomes fluffy and changes its color a little.
  7. Incorporate the dough in small pieces to the bowl with the lard, add the baking powder and integrate with your hands. The dough should be quite light and smooth.
  8. Now take a corn husk and cover the wide part with a layer of dough, add the desired amount of shredded meat, the pulp of the reserved green sauce and fold the sides towards the center and the thin part of the husk upwards. Repeat this procedure with the rest of the ingredients.
  9. Fill a large steamer with hot water to the mark on the rack, cover the bottom with the remaining corn husks and place the tamales vertically to hold each other. Cover and cook for 1 hour and 20 minutes.
  10. After this time, remove the tamales from the steamer and let them rest in a colander.
  11. Cut a bolillo in half, peel a tamale and place it inside the bread, add some of the reserved liquid green sauce, sour cream and cheese to taste. Repeat this procedure as many times as necessary to satisfy all your guests.
  12. Now you can enjoy this delicious tamale torta whenever you want.


  1. If you have enough time, you can make the tamales the day before and heat them in the steamer when preparing the cakes.
  2. With this quantity of ingredients you can make approximately 40 good sized tamales.
  3. It is important that the corn husks are well hydrated so that they do not break easily when forming the tamales, so soak them for at least 30 minutes in a bowl of warm water and drain before using them.
