Tamales with mushrooms

Looking for a quick and easy vegetarian recipe? Then be sure to prepare these delicious tamales with mushrooms, a delicious traditional meal that is ideal to enjoy for breakfast, lunch or dinner, it also yields quite a lot and you do not need to have many ingredients, being perfect to delight your guests with this delicacy.


  • ½ kg of mushrooms
  • 200 grams of Oaxacan cheese in strips
  • 200 grams of panela cheese in strips
  • 1 large onion, finely chopped
  • 3 cloves of garlic, finely chopped
  • 3 sprigs of epazote finely chopped
  • 2 tablespoons butter
  • 1 ½ tablespoons olive oil
  • Salt to taste
  • 1 kg tortilla dough
  • 125 grams vegetable shortening
  • 125 grams of lard
  • 1 cup chicken broth
  • 16 roasted banana leaves, chopped


  1. Cut the mushrooms in thin slices.
  2. In a saucepan, add the oil together with the margarine and dissolve for one minute over medium heat, add the onion to fry for 2 minutes while stirring with a wooden spoon.
  3. Add the garlic, sauté for one minute and add two thirds of the mushrooms, the epazote, salt to taste, mix well and let cook covered for 3 minutes, remove from heat and set aside.
  4. Place the tortilla dough in a large bowl, add salt to taste, pour the chicken bouillon, lard, vegetable and knead everything for 3 minutes or until it is well integrated and smooth. Let stand for 10 minutes.
  5. Place a banana leaf on a clean table, spread a thin rectangular layer of dough on it, add a portion of the mushroom filling, a strip of panela cheese, oaxacan cheese and raw mushrooms, fold the leaf in half and then fold the ends to form the tamale.
  6. Tie with a strand of the same leaf and repeat the same procedure with the rest of the leaves and ingredients.
  7. Place the tamales side by side in a steamer, cook for 1 hour over medium heat and remove from heat.
  8. Untie the strand from the tamales with mushrooms and enjoy this exquisite Mexican food.


  1. If you do not have banana leaves, you can wrap the tamale in corn husk previously soaked, just place the dough, the filling in the center, close and tie with a string of the same husk.
  2. The combination of butters adds softness and more flavor to the dough, but if you prefer, you can use just one with the full amount.
  3. If you want a spicy touch, you can add sliced jalapeño peppers to the filling.
